3.2 Design.
3.2.1 Type I, Commercial Use. The type I turner dimensions shall be in accordance with Table I and the applicable figure. The blade of the type I turners shall have a Rockwell Hardness of C35 to C45 when measured in accordance with ASTM E 18. The blade shall be cleaned and polished to a 28 or better finish as defined by the American Iron and Steel Institute’s Handbook, “Finishes for Stainless Steel”. The handle shall have a textured finish.

Note: The style B and C turners shall taper to a minimum thickness of 0.026 inch (0.66 mm) at the tip.
3.2.1.1 Style A, Hamburger turner. The style A hamburger turner shall be in accordance with figure 1. The blade of the style A turner shall be beveled across the front edge at an angle of 20 to 40 degrees.
3.2.1.2 Styles B and C, Steak turners. The style B and C steak turners shall be in accordance with figure 2. The style B and C turners shall be identical except the style C turner shall be perforated with 16 to 24 holes, 1/4 inch (6.4 mm) minimum diameter, in the main body of the blade.
