3. SALIENT CHARACTERISTICS

3.1 Design and construction. The pan, cover and adapter shall be fabricated from any aluminum alloy commercially acceptable for the fabrication of food service equipment. The adapter, a Government unique requirement (see 7.4), shall fit inside the pan and shall accommodate food container inserts for food warming. The warmer adapter shall be as shown in figure 1 or figure 2 as specified. The pan shall have four handles positioned in the center of the ends and sides of the pan. The cover shall have two handles located in the center on each end of the cover. The handles shall be formed of 5/16-inch stainless steel wire. The handles shall be secured to the pan and cover with retainers fabricated from stainless steel sheet. The retainers shall have handle stops to prevent the handles from elevating above the horizontal position. The handle assembly shall not fail or permanently deform when the pan is load-tested as specified in 5.3. The handle stops shall not exceed the width of the retainer when attached to the pan. Each handle retainer shall be attached to the pan and cover with corrosion resistant steel rivets.

3.2 Dimensions

3.2.1 Pan. The outside dimensions of the pan shall be 20-5/8 by 17-3/8 by 7 inches. Tolerances shall be & 1/32 inch. Thickness of the aluminum alloy shall be 3/16 (±1/32)

inch. The corners of the pan shall have a 1-inch inside radius.

3.2.2 Cover. The outside dimensions of the cover shall be 21-5/8 by 18-1/8 by 2 inches. Tolerances shall be ± 1/32 inch. Thickness of the aluminum alloy shall be 3/16 (± 1/32) inch. The inside corner radius shall be 1 inch.

3.2.3 Handles. The inside dimensions of the pan and cover handles shall be 4 inches wide by 2 inches deep (±1/4 inch).

3.3 Standard compliance. Fabrication of the pan, cover and adapter assembly shall comply with the requirements of NSF International Standard No. 2 as specified in 5.2.

3.4 Finish. The inside and outside surfaces of the pan, pan cover, and adapter shall have a standard mill finish.

3.5 Workmanship. The finished pans, covers, and adapters shall be free of cracks, dents, malformation, or deep scratches. All burrs, slivers, splinters, sharp edges, dirt, grease, and foreign matter shall be removed.
