FILTER UNIT, COOKING GREASE, PRESSURE
The General Services Administration has authorized the use of this commercial item description in preference to type II, size 1 and type III, size 1 of Military Specification MIL-F-2296.
Salient characteristics.
Design and construction. The filters shall be designed to filter liquefied, solidifying, or non-solidifying frying medium used in deep fat fryers and doughnut machines at a rate of 3 gallons per minute minimum. The filter shall consist of an electric motor(s), as specified, pump(s), reservoir, hoses, filters, controls and fittings and have a means for fast draining of the system. The filters shall be of the following types and sizes:
Type II – Gravity or pumped drain and pumped refill
Size 1 – 50-pound minimum reservoir capacity
Style A – 120 V, 60 Hz, single phase
Style B – 220 V, 50 Hz, single phase
Type III – Pumped auction rain and pumped refill
Size 1 – 80 pound minimum reservoir capacity
Style A – 120 V, 60 Hz, single phase
Style B – 220 V, 50 Hz, single phase
Type II, size 1 filters may be equipped with a reversing capability to permit pumped suction, from fryer to filter, or they shall be capable of being rolled under the fryer drains where they can be filled. Filters without the reversing capability shall not exceed a height of 13-3/4 inches, exclusive of the handle. Type III, size 1 filters shall have a reversing capability to permit pumped suction as well as pumped refill each at a minimum rate of 3 gallons per minute. Each type of filter assembly shall be supplied with sufficient filters necessary for 100 filtering operations and each filter be capable of being easily removed and replaced. When a filtering compound is necessary to perform the complete filtering process, a sufficient quantity shall be supplied for at least 100 filtering operations and the compound shall restore color and remove odor and taste from the frying medium. The filters, when used with or without the filtering compound, as recommended by the manufacturer, shall retain particles 10 microns and larger. The filter assemblies shall be mounted on swivel casters; the total load rating of which shall be equal to or greater than the weight of the filter assembly and the rated load of the reservoir. All materials in contact with the frying medium shall be acceptable for food handling service and be capable of withstanding the temperatures normally encountered in filtering operations. The filters sanitation standard shall comply with the requirements set forth in the National Sanitation Foundation Standard No. 4, as applicable.
