COMMERCIAL ITEM DESCRIPTION

PAN SET, BREAD

The General Services Administration has authorized the use of this

Commercial Item Description for all Federal Agencies.

1. SCOPE.

1.1 Scope. This commercial item description covers aluminized steel bread pan sets for use in bakeries.

2. CLASSIFICATION

2.1 Classification. The pan sets shall be of the following sizes.

Size 1-4 pan set

Size 2-5 pan set

3. SALIENT CHARACTERISTICS

3.1 Design and construction. The pan sets shall be constructed from aluminized steel. The shall be formed from a single piece of aluminized steel 0.0208 inch minimum thickness (0.53 mm). the pan sets shall be constructed as shown in figure 1. The bread pans shall be encircled on the top edge by a 0.140 inch (3.6 mm) minimum diameter steel wire. The pan sets shall have strapping fabricated of the same material as the pans completely encircling the pan set either below or over the wire bead at the manufacturer’s option. The strapping shall reinforcing channels. The bread pans shall be permanently joined to the strapping at the pan ends. The dimensions shall be as listed in table I. the spacing between the top of the pan sets shall be at the manufacturer’s discretion and shall be consistent within each pan set. The pans may have a nesting flare at the manufacturer’s option.

3.2 Finish. The exterior of the pan sets shall be finished with a heat absorbent coating. The interior of the pan sets shall be glazed with the manufacturers standard commercial glaze.

3.3 BISSC Standard Compliance. The pan sets shall comply with all provisions of BISSC Standard No.35, Baking Pans. In the event of a conflict between BISSC 35 an the CID, the requirements of the CID shall take precedence.
