1. Tolerances for bottom inside dimensions shall be +/- 3/16 inch.
2. Tolerances for size 1 pan shall be + 9/16, -1/4 inch.
3. Tolerances for size 4 and 5 pans shall be +/- 1/16 inch.
The handles shall have a minimum of 1-1/2 inches clearance from the pan when in the horizontal position (90 degrees from the side of the pan). The handles shall be constructed from corrosion-resisting steel-wire, chrome-plated carbon steel, or tinned steel wire. The size 4 and 5 pans shall be reinforced with two stainless steel or tinned steel straps, extending lengthwise along the outside bottom and up the end walls. Each strap shall measure 1 inch minimum width and 0.0827 inch (13 gauge) minimum thickness, and shall be securely attached by two aluminum alloy rivets at each end of each strap. Except for the heavy duty sheet pan (Size 6), the pans shall nest and not bind when stacked.
The size 5 pan shall be fitted with clips with stainless steel, chrome plated carbon steel, or tinned steel. The clips shall be located equidistant from each end of the pan sidewall and shall extend above the pan to prevent the size 4 pan from sliding off when used as a cover.
The size 9 pan shall be fitted with two wire loop handles, one in the middle of each of the short sides. The handles shall be formed from tin-plated steel wire or stainless steel wire or stainless steel wire having a minimum diameter of 0.14 inch and be elliptical in configuration. They shall have a minimum length of one inch and form a minimum opening of 3/4 inch at the widest point. They shall be fastened to the pan by means of stainless steel clip riveted to the pan. The size 9 pan shall have five dimples in the bottom for the pan to rest upon. One dimple shall be located in the center of the pan and the other four in each of the corners.
All pans, except for the size 7 pan, shall have an open bead. Pans with open beads shall have one-half bead with an inside radius of 1/8 inch minimum. The size 7 pan shall have a wire rolled and closed bead.
3.3 Marking. The pans shall be marked with the manufacturer’s name, trade name, or trademark of such known character that the source of the item may be readily determined.
3.4 Workmanship. Pans shall have no sharp edges, slivers, burrs, deep scratches, tool marks, or other defects which might affect serviceability, durability, or appearance.
3.5 Metric products. Products manufactured to metric dimensions will be considered on an equal basis with those manufactured using inch-pound units, providing they fall within tolerances specified and all other requirements of this document are met.
