COMMERCIAL ITEM DESCRIPTION
SCRAPER, BAKERS
The General Services Administration has authorized the use of this commercial item description in preference to MIL-S-17531.
1. SALIENT CHARACTERISTICS
1.1 Design and construction.
1.1.1 Handle. The handle shall be of one piece molded construction of Food and Drug Administration (FDA) approved plastic material conforming to National Sanitation Foundation (NSF) requirements. Dimensions shall be 1-5/8 ± 1/8 inches high, 5/8 inches minimum 1 inch maximum for width, and 6-1/4 ± 1/8 inches long. The handle shall be finished in accordance with commercial practice.
1.1.2 Blade. The blade shall be fabricated from 0.025 inch thick stainless steel and be 6 inches minimum to 6-1/4 inches maximum in length. The overall height of the scraper shall be 4-1/2 inches minimum to 4-5/8 inches maximum. The blade shall be secured to the handle with either 2 or 3 uniformly spaced rivets. The blade shall be heat treated to Rockwell C40 to C45. The blade shall fit firmly in the handle slot so that the surfaces of the slot bear evenly against the blade at all points to prevent accumulation of food or foreign matter between the handle and the blade. The blade shall be polished in accordance with commercial practice.
1.2 Marking. The scraper shall be marked with the manufacturer’s name, trade name, or trademark of such known character that the source of manufacture may be determined.
